Characterized by its rich sweetness and fluffy flavor, Shiro-miso is made from carefully selected soybeans that have had their skins removed and then polished, and koji refined in a special "kouji-muro" (kouji mill) to produce a sweet, fluffy miso with a rich sweet taste.
